This wine was made with varietal expression in mind and offers a bit more weight and complexity than the light bodied wines the grape is known for. Pristine fruit, a long, cool fermentation, and fine lees contact help to build a textured and fruit-driven wine.

Soft but still refreshing, the wine is easily enjoyed with a variety of food options or on its own to enjoy the additional aromas and complexity that develop in the glass or with decanting especially if drinking the wine early following release.


Light yellow in colour, with delicate aromas of pear, honeydew melon, white flowers, and white peach. The palate is wide and voluminous, and follows with pear, melon, and a pithy note which leads into a long finish and subtle almond character.


This wine can be paired with a wide range of foods such as salad with grapefruit or watermelon, white fish, grilled chicken, and even roasted ham. Also consider it when wine would not be the obvious choice, such as alongside tacos with fresh pico de gallo or mango salsa.


This wine has the structure to cellar and continue to develop for the mid-term. Showing best from release through 2025.

The 2021 vintage started with relatively good vine and bud health from a small crop and mild winter. Summer temperatures were among the hottest on record and conditions were optimal for flowering and fruit set.

In August, what appeared to be an early and ripe vintage stalled due to drought. This was followed by record rains in September and October resulting in a rapid increase in cluster weight and dilution of berry contents.

Where harvest was able to be delayed until adequate ripening, most varieties are showing good fruit character early with delicate aromatic white varieties and fruit- driven red varieties.

Grapes were hand harvested on a cool morning, before being destemmed and crushed and allowed to soak in the press for a short time to allow for some extraction of flavours and tannins from the skins. Juice was settled at cold temperatures and racked before inoculation with a selected Torulaspora delbrueckii yeast strain, followed by a Saccharomyces cerevisiae yeast four days later, and fermented at cool temperatures for 30 days. During this time a partial malolactic conversion also took place.

Following fermentation, the wine was racked once and allowed to age on fine lees for an additional four months. The wine was gently fined and clarified using only bentonite (no allergens/non-vegan fining agents were used), followed by filtration prior to bottling.
