Divergence Wines 2020 Blanc de Blancs

100% Chardonnay from the Hughes Vineyard, hand picked, whole cluster pressed and only the cuvée juice was used for this wine at less than 500 L per tonne. The base wine was barrel fermented in neutral French Oak and aged 6 months on lees, before a subsequent 42 months en tirage. A small dosage of 2 g/L was added at disgorging to balance this wine.
